While on my road trip in August I was able to spend some time with my dear friend Chuck and his sweet pup Gentle (more about Gentle in a future blog post).
We are able to spend some time in Santa Fe exploring and ended up having a nice snack from a street vendor on the Plaza. They made delicious chicken fajita tacos. After that, we determined that we wanted a sweet treat and ended up at a nice little place called the Plaza Restaurant.
Chuck ordered coconut flan but ended up getting coconut pie and it was great. I ordered “Grandma’s Tres Leches Cake” because after all, you can’t go wrong with Grandma’s recipe, right?
While we were waiting for our deserts I got a text message from a Diane Dotson, the leader of the PCCI prayer team. The team is praying for the 2020 PCCI retreat and Diane was letting me know that the scripture for the retreat is going to be Isaiah 43:19:
See, I am doing a new thing! Now it springs up; do you not perceive it? I am making a way in the wilderness and streams in the wasteland. NIV
Take a close look at the picture of Grandma’s Tres Leches Cake above. Do you see anything different?
I was surprised because the cake had STRAWBERRIES in it! Maybe this isn’t that unusual for you, but I had never had any Tres Leches Cake before with fruit in it — and strawberries are my favorite!
I laughed saying, “Do you not perceive it? See, I am doing a new thing!”
When I sent Diane the picture, she texted back “A tasty new thing!” It was delicious for sure.
